Ingredients (2 servings):
• 200g spaghetti
• 100g pancetta or beef bacon
• 2 egg yolks + 1 whole egg
• 50g grated Parmesan cheese
• 1–2 cloves garlic (optional)
• Salt & black pepper
• Olive oil
Instructions:
Boil spaghetti in salted water until al dente.
While cooking, sauté pancetta in a pan until crispy (add garlic if using).
In a bowl, whisk eggs and Parmesan together.
Drain pasta (reserve a little pasta water).
Add hot pasta into the pan with pancetta (turn off heat).
Pour egg mixture over pasta and toss quickly. Add a little pasta water if needed to create a creamy sauce.
Finish with extra cheese and black pepper.
